      What Sous Vide machine do you have. I have been wanting to get one now for a few months.

          They are cheaper than when I first got mine. I've seen them in the $300 range. You can also buy the immersion kind though I'm not familiar with that. Mark might be able to steer you in the right direction. I absolutely love this thing! I've got wings in there right now for the game tomorrow.

                    There are several immersion heater for sous vide around $200.

                    An immersion heater has :

                    1. Digital PID temperature control
                    2. Water circulator.
                    3. Heater.

                    An immersion heater allow you to use different size containers for the cooking.

                      Immersion Circulator. The biggest difference is the circulation pump. A Sous Vide machine (water oven) like Squirrel's uses convection to carry the heat. That's fine for small family portions. The circulator ensures even temp with larger portions or quantity. My newer one has a 4 gallon bath. The older one has a capacity of 6 to 8 gallons. I can cook a lot of chicken in dat!
                      The temp control is not PID with my units. There is no learning curve, they heat, taper heat and hold temp. The newer unit within .1°, never over and within .01° of the set point. Kinda cool chit to watch.
