Was at Costco Saturday, and found boneless leg of lamb for $4.99 per pound. That's cheaper than beef! Decided I needed to give it a try. Found a good recipe on another forum. First, I salted the meat all over with 1/2 tsp kosher salt per pound and then tied the leg into a log shape to facilitate more even cooking. I placed it uncovered in the fridge for about 4 hours. I then made up a rub of:
2 tablespoon dried rosemary leaves, broken or crushed a bit by hand
1 tablespoon whole mustard seeds
1 tablespoon ground black pepper
1 tablespoon paprika
1 teaspoon ground bay leaves
10 cloves of garlic, peeled and pressed, or minced
I made this into a paste with olive oil. Just before I put it on the grill I rubbed it in and gave the roll a good coating. I cooked indirect until the internal temp was 115. I then moved it over very hot coals and seared until the internal temp was around 120 or so. I rested it for about an hour. Man this was good and Mrs Snarlingiron really loved it too. Will definitely do again
