Home grown brisket

Finally time to eat. Brisket sat wrapped in the cooler for 3 1/2 hours resting before I sliced it and was still at 185. It was the best brisket I've ever had. Tender, juicy and the flavor was out of this world. What surprised me the most though was how much this one shrunk up while cooking. But who cares really it tasted great.
Here it is with the foil opened. Look at all that juice!

Don't laugh, my knife skills suck. They suck so much I cut 2 fingers chopping green pepper for the baked beans.
The liquid gold that was left over. This is going over the leftovers once it's defatted.
And finally a plated pic with some Dutches wicked baked beans and home made mac n cheese. Not pictured was the home made cornbread, I was too hungry to take pics.
