  • Short ribs and a chicken in the Napoleon Apollo.

    Picked up a couple of beef short ribs,along with a flat chicken at my butcher today.
    First time running the smoker dry.
    Filled the water pan with sand and covered it with foil.
    Wrapped the ribs around 165f and took them up to 203f.
    Chicken was done after 3hrs.
    5 hrs for the ribs.
    We liked the results.

            I do believe you nailed those ribs. And the "flat chicken" reference... next time I do a spatchcocked chicken, I'm stealing that name! Love it!
