  • My Daytona 500 Smoke

Since I just got here I figured I would post my last smoke.

The lineup: 1 7lb Butt, 2 dozen abt's and smoked baked beans.

    Got the thin blue going.

    Added meat.

3 hours in and looking good. Basting with whiskey and cider vinegar.

5 hour point. Finally plateau'd at 165 and dropped to 160. Now holding at 163.

    Prepping the beans and abt's.

    Ready to cook.

    Wrapping the butt.

    Beans are on!

ABT's are cooked! A lil over but still very tasty!

Pork so tender it can be pulled with a plastic fork.

    The line up.

    A final plate...

Excellent meal in honor of a mediocre race...

Everything looks really good. Especially the pool in the background. I'm tired of winter.

If it makes you feel any better the pool is a bit cold to go swimming in yet. It does make for a scenic area to cook.

Even with clouds threatening it was nice to be outside.

We need to get in touch and do a smoke soon before it gets to blazing hot outside.

I was just thinking the other day I had not seen you on smf in a bit. Yes we do need to do a cook. Lets aim for a time in March. Maybe we can get FBJ to join us as well.

March would good for me, don't think I have any out of town work going on. This week is pretty busy and next week I have to go to Indy, but I'll be in touch. Maybe we can meet up for lunch one day at Oneco's and figure soemthing out?
