  • How to use up your zucchini (My WAY)

    Well I have a crap ton of zucchini to use up. Here is a way I have been using it, and other leftovers up. First the ingredients....

    Coconut oil ( FREAKING AWESOME STUFF! )
    2 zucchini
    1/2 an onion
    1 small bell pepper
    2 TBS Mad Hunky GP -NaCL
    Meat of your choice (in my case left over links from Tailgating GO BEAVERS!)
    2-3 gloves of garlic
    1/2 cup hot salsa; I wanted tomatoes and didn't have any this was a great substitute.

    Ok chop up the veggies and meats. Heat up your CI skillet using medium heat. Put in about a tablespoon of the Coco oil. Add your zukes, onions, and peppers. Cook those until just limp. they should have a little bite left. Add the meat. as this meat was already cooked I am just heating it through. Right before you are finished add the garlic, Mad Hunky, and salsa. Let everything come together and serve. You can put over rice or noodles if you want. I just ate mine as was.

      Very similar to a Hunky dish called "letcho". Usually a type of ground meat was added as well. And a hot pepper er two. Delicious stuff.
