  • Fried tomato lasagna

    Ran down to the local farmers market yesterday and picked up some goodies. Got home, ate two ears of corn and then contemplated what to do with the tomatoes. Then I realized I hadn't made fried tomatoes yet this summer! So as I prepped, I was also heating up spaghetti sauce to make easy to take to work lunches. The two items clashed and I came up with using fried tomatoes in place of noodles for a lasagna dish. Like you would use eggplant. I had ricotta on hand, parmigiano reggiano, but no mozzarella. Threw it together sans mozz. Let me tell you it came out fantastic! Why have I never seen this nor thought of it before!! This will be common place in the summer with good tomatoes.

    That looks delicious. Great idea. I love fried maters.

    I have had fried tomato used instead of veal or chicken in a Parmigiana dish with noodles. Gonna have to try the lasagna for sure.

      Wow Shell...I'm gonna have to think on this one for a while...I think I love the idea...But I have a hard time using fried tomatoes for anything but awesome fried tomatoes...

                      That is awesome. I will make this very soon. I sometimes use zucchini for noodles and have to remove a lot of moisture before making the lasagna. Did you have any issue with it have to much moisture? for awesomeness.

                          Thanks for the points guys. I'm telling you, this stuff was amazing. I'm mad that I hadn't thought about this before!! I could have been enjoying this for years!!

                          I don't think it had too much moisture at all. I added a little regular tomato sauce in there as well. Next time I'll cut the tomatoes a little thicker because they did get a little mushy, but same thing as if you do it with egg plant. I think it just be the nature of the beast. I'm going to make this again before we lose all the big summer tomatoes!

                          And I like regular fried tomatoes also, so I made some for this concoction and then had a few slices just plain ol' fried...restaurant down the road here does them all year long topped with lump crab meat and served with a dipper of a chipotle remoulade, great stuff!!
