Well I left work early at 2pm and swung by the store to pick up something for dinner and ran across these good buys.
Wasn't planning on smoking anything so I started a fire quick, removed the membrane (pain in the arse) Gave them a quick rub with some Pappys, and the butt got some Yardbird.
Stoked the fire with my new lump charcoal w/some cherry and hickory and had things going good. Foiled the ribs with apple juice and beer. Removed from foul and made a reduction with the foil juices and added some heads country red to glaze them a bit while they finished. Served with some grilled pineapple they were pretty darn good. Really only a couple real meaty ribs but worth a try and my time for sure.

The butt was foiled as I pulled the ribs out of the foil. Foiled it with apple juice, some of the pineapple marinade, and beer. Took it to 200, rested, and fridged overnight. Separated the fat from the foil juices and pulled the pork in it's juices. Great stuff and managed a successful weekday smoke.
