    Yesterday I ran to the grocery store for strawberries to make jam and remembered the last time I was there they had cactus leaves but I passed on them that time. Not this time! So I start with grabbing 3 cactus leaves, then a couple poblanos. Need some limes and what the hell let's try some tomatillos. My mind is turning and now need a protein. Get to the meat counter and one tri tip was left and staring at me. In the cart it goes. They didn't have enough strawberries to make jam so we went fishing instead. Text the wife today and had her fire up the green mountain. I love that is so easy to use, my wife can easily run it. She gave the tri tip a coating of Mexican seasoning. Onto the smoker at 200. It took a little over an hour to cook. I got home just before it finished. Prepped the cactus and whipped up a tomatillo green salsa. When beef was done I cranked the temp to 500 then put the cactus and poblanos on for about 12 minutes. Got everything cut up. Tortilla, meat, poblano, cactus, red onion, and the sauce on top.

    Not sure about the tomatillo sauce but the acidity from the limes really helped make it a fresh, crisp tasting fajita. Will be doing this again. Haven't been on much cause I haven't been cooking. To much going on with work and our wannabe petting zoo at home. Thanks for looking!
