Our 11th wedding anniversary was this past Wednesday so the Mrs said we should combine the special dinner with Mom's Day dinner. Sure, not a problem. My last trip to Costco, I bought a USDA Prime beef tenderloin in the cryo pack. I brought it home and cleaned/trimmed it into some fillet mignon steaks and the chateaubriand roast. We had the chateaubriand for the special dinner today.
Chronologically, I made some of the 9-hour burgundy baby portabella mushrooms to go with dinner. I gave the TL a dusting of MH JAB and threw it in the SV at 134° for 5 hours. About a half hour out from dinner time, I pulled the TL and dried it off and gave it a dusting of Tatonka Dust. I only use this stuff for special occasions since it is no longer available.
I coated some asparagus spears with EVOO and some green chile salt and threw them on the vortex to get some char before the chateaubriand hits the grill. I gave the chateaubriand 30 seconds on each side before pulling it for dinner.
