Rubbed first with JAB and then with TD...
Smoked @ 250 with olive wood
This pic is from the 3-4 hour mark...
After 7-8 hours they were between 190 and 200 and probe tender...
So in they come to rest for another hour...
Sliced and ready to eat...
Freaking amazing...
