  • Beef Ribs - first time

    Ok, here goes. I've never had beef ribs before, no less even cooked them. Rubbed them good last night and threw them in the fridge:



    Trying something else new today. Sand in the water dish. It's kind of damp out today and the sand is really wet so shouldn't have a problem with moisture. Here they are in the Bradley:



    I've got a foil lined pan under the bottom rack of ribs to catch the drippings.

    Plan is smoke them at 220ish till they're done. :D Not sure if I'm going to do the 3-2-1 or some variation or just leave them as they are.

      mmmm! Dino-bones! They be REAL good!

      And- consider saving them after and simmering for stock. Yes..even after you have pick 'em clean LOL... have a pot of simmering water ready and in they go!

            Time to foil

            They've been in for 2.5 hours probably at about 250-260 and the meat is pulling away from the bone:



            I'll aim for 2.5-1-1 and see how it goes, lol.

                Out of foil

                I tried to use tongs to pick the rack up and it started to fall apart, lol. Guess they're done. Put them back in smoker to firm up a little and hopefully crisp them a tad.



                Decided to throw some halved potatoes in to see how they came out. Just cut them in half, greased them with olive oil, seasoned with salt and pepper.

                    lol, The ribs were a huge hit. There is nothing but bones left.
