  • Beef Shank Happiness

    Picked up some nice beef shanks...one of the best braise/stew meats there is!

    Marinated in red wine, soy, garlic, onion and CBP

    Searing over the "Vortex" :{)

    All ready to go into the oven- dusted with dried mirepox, dried tomato and some beef bullion after this pict.

    Mmm gonna add potatoes, celery and shittake mushrooms...

    Oh.. and some pork belly trim getting crisped/sauced up after simmering in garlic/CBP/onion water for a couple hours...gonna make a sammy er two!

                  Used a little water to start, then Newcastle Brown. Love the mellow malty flavor... makes a great potato too. Guess I'll take a pict of the 2 leftover shanks :lol;

                    I've never seen a cut of meat like that. Is there another name for it?
                    Beef Shanks to me are bare bones c/w marrow. I smoke them for my best friend.

                      We get them cut like that. You can get just the bones as well, as they make burger and stew meat out of them alot. Lot of connective tissue, lot of gelatin...lot of flavor. And be danged if the dog is getting MY marrow!

                        Thanks for the clarification. I've just never seen them cut like a chop before. I've got enough bad eating habits without adding marrow (drool) to them. Maybe if I cut my bacon intake by 75 percent.......hmmmm.

                        Ya, my dog is spoiled rotten. My latest for him is smoking Buffalo knuckles.
