First, I had a lot of stokers in the fire when I started these which led to an oops! Smoked on the Akron @250 with jack daniels briquettes and wood.
The slab
Lathered in Worcestershire and gave a dusting of my beef rub.
Smoker up to 200 so I put them on. Now my problem didn't put a pan on top of my heat diffuser cause I was making wicked baked beans to sit underneath. I got busy making the beans, potato salad, crab cucumber rolls(snack), and a peanut butter pie. Went to sit down an hour later forgot to keep an eye on the maverick. Oh crap(not what I said) 400 degrees. Jumped the baby gate while the wife was asking what's wrong. I think what happened was the fat dripped on the pizza pan and then onto the coals. Scooped some hot coals out and then put the beans on. Settled in at 250 then with minor adjustments. 2 hours in I started mopping with a mixture of merlot, Worcestershire, and real butter. Did that every 20 minutes. With 45 minutes left I gave it a nice coating of my grandpa's BBQ sauce, thick but goes great with beef. All done.

The ribs were done exactly how I like them, a little tug. Great flavor. This was the first time doing these beans and they were great. Potato salad, well it was ok but I'll have to get moms recipe. Haven't had the pie yet, to dam full. Thanks for looking.
