Pecan smoked beef ribs with meat on em on the Weber

  • Pecan smoked beef ribs with meat on em on the Weber

    Picked up these ribs...Label said extra meaty...I'm sold
    They were sliced individually like shorties but the package said back ribs...


    Layered on the flavors...
    Started with J.A.B. and let that melt into the meat like it does...
    Then some fine ground Montreal Steak seasoning...
    Then some CBP'''
    Followed by some Kosher salt...
    And finally some Turbinado sugar...Yes! I actually put sugar on my beef


    Onto the Weber...Minion setup with R.O. briqs and pecan chunks...


    Lookin right on track @ 2 hours...


    Meanwhile in the house, I cooked 5 slices of bacon in the CI...


    Removed the bacon and tossed in some shallots...


    Then some petite green beans...Saute for a couple minutes and add the lid...
    Removed pan from the heat and the hot pan cooked the beans to a perfect crisp tender...


    Back outside the smaller ribs have been removed...
    Mushrooms are filled with seasoned field peas and topped with pepper jack cheese...
    Cooked them for a full hour...Ribs were done in 5,5 hours


    And all together on the plate
    Beans are dressed with some Reggianno cheese and bacon...


    Outstanding day...Only one brief torrential downpour to deal with
    Fire was hot and the beer was cold It's all good...

    And thanks for lookin at my cookin...

            Pea stuffed mushrooms? Just when you think you've seen everything..

            That plate woulda been hit hard by this guy, really hard.
            Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
            My best asset however is the inspiration from the members on this forum.

                Field peas...Kinda like black eyes only smaller and a bit firmer...And a lot more flavorful...I have filled the shrooms with black beans before but these were what I had leftover in the fridge...And it was a huge hit with Lena so I guess it might happen again
