  • Pastrami

    I picked up one of those briskets that had already been corned last week and smoked it for some pastrami Friday. I just used the seasoning packet that came with it and smoked it until it reached 165 internal temp. For my first try at pastrami, it turned out OK, but it was sorta tough so I didn't do something right .....maybe I cut it wrong and not against the grain. The flavor was really good though.

          when i make a 'strami outta a corned beef, i throw that lil packet away......

          i then soak for a couple days to remove as much salt as i can......then rub, and i mean RUB HARD........with a mixture of CBP and Freshly ground corriander.........let set at least overnite.........then smoke to temps.........

          but yeah, brisket flats vary from cow to cow, and you can get some tuff ones out there.........but still looking good.......


          let us not cry because we lost someone, but let us smile because we enjoyed their company for what time was allowed us!

            it might be a little tough, but it sure looks good. I almost picked one of them lil puppies up also. points to ya for giving something new a try.

              Give her some steam,, she'll tender up on ya eventually...

              Then just drop the slices back into the drippins.

              Mighty tasty lookin pastrami there.

                Thanks, everyone. Next time, I'll soak it at least over night. For this one, I'll add some stream and see if that helps. Thanks for the tips!
