  • Midweek smoke in July

    Hey Kids, I finally took a few pics of a smoke. I have not been posting too many new pics or threads because I have been lazy, and in too much of a hurry lately to take pics.

    I still get to load the Lang at least once a week,but my days of all- nighters has probably come to an end for a bit.

    I wanted to stock up a bit on some sliced brisket and Burnt ends.It was a pretty day and no one else was around, so I got to play in the pool, smoke some food, listen to tunes, and relax a bit.



    Had a buddy drop off some BB's he wanted me to do, so I slid them in next to the briskets and pork T-loins. Here is a pic, just before they cooled for vac-packing.



    after the briskets were seperated( at 180) I did some burnt ends. These really turned out nice and tender.



    and then after an hrs rest, I had to quickly slice these up so I didn't miss the last episode of most dangerous catch!



    I was pretty happy to the changes in injection solutions today.Little changes seem to be best.

    I hope everyone is enjoying their summer.

        ........ injections?..... Did I hear someone mention injections ? ....... Always interested in hearing a little about injections.... ...... You do get some of the nicest looking finished products on here Master Dan! ..... Outta , but oh so worthy

            Sounds, and looks, like one of the best days ever! Hey, do you cook those ribs to completion if your going to vac pack them? Never done it.

              Newsmoke, These are for a person who is going to warm them on his propane grill for company. Most of the time they are all the way done unless someone tells me otherwise!

                glad you posted pics of the food - for one horrible moment I thought we'd get some of you in the pool

                Swapping all nighters for all dayers, sounds like the right way to go

                  All looks great Captain. Sometimes little changes can have a big affect, while tweaking a rub the other day I was doing just that.
