  • Briskets and butts

    Did a big smoke saturday. Did two briskets, two butts, two batches of almonds and a dozen eggs. One brisket started out weighing 13 lbs and the other was 9 lbs. Friday night I trimmed both and rubbed with evoo and my rub bagged them up and threw them in a cooler. Fridge space was not to be found. Used a mix of oak and hickory, smoker temp was 225-250 most of the time.

    They were both done in 10 hrs. Got ambitious and even did my first batch of burnt ends. Definitely worth the effort.



    Forgot to take a pic of the burnt ends when they came out of the smoker. The amount seems to have diminished, considerably.


    Everything got 5 , and rave reviews from MIL who was visiting last week.

                  Dawn, that smoker load of goodies looks beautiful. The brisky has a good smoke ring too. They sure weren't wasting any time cooking were they.
