      glad you guys liked the looks of it - i think it would reappy be good over applewood smoke with no foil, using the brasing liquid as a multi-prupose marinade, then mop, then reducing down and using as a glaze toward the end.

      rich, if you follow those links and cross-links, you will get some great ideas if you want to give some cubanos a try. the recipe is for oven roasting the pernil, but whoopee-doo, just put it over smoke, the way the original was porbably made back in the day! ;)
