Was picking up a pizza (Hawaiin) the other night for the family & thought how about (aboot in Canada) Canadian Bacon & Pineapple in an ABT
So, did some up last night. Smoked Ham, Pineapple, cream cheese & shredded Italian cheese blend & some Frankenstein rub for good measure Bacon wrapped & smoke grilled on the Weber kettle with Pecan & Apple.
Learned a great trick for wrapping stuff with bacon.... Take your knife blade & lay it pretty much flat in the middle of the bacon strip & press lightly down at a minimal angle & work that slight pressure from the middle of the strip to the edge a few times. Flip bacon strip over & do the same thing to the other half. You can "stretch" the bacon strip to basically twice its original length & makes for a better wrapping strip.
