  • tacos al pastor ala pancha (on the griddle)................

    if ya don't have a vertical roto here is an easy way to do them on a flat top or even in a pan....
    start with the fruits...


    then the aromatics....


    gotta have some chilli.....


    some achiote paste.....


    rough chop everything and puree in the blender.....


    small dice or grind on largest grinder plate some pork.....


    marinate for several hours...overnight is best......


    already dark outside but pic is still better than rich's in the daylight...


    also did some grilled shrimp with the same marinade....


    my version of tacos al pastor and tostadas de camaron........

    I want to eat at your house!! wonderful!! all day for that one!!

    can you give details on how much fruit you used in that marinade? Also how much achote paste?

        not good with recipies.......think i used 3 oranges, 1 lemon, 1 lime and the whole pineapple.........should have gotten another pineapple and grilled it........

            Damn Rob...I thought that I never wanted to go back to Arizona...I mean you do have that whole canyon thing going on But this makes me want to stop in for a visit...

                        I've only ever used the anatto/achiote seeds... Do you notice any flavor difference between the seeds & the paste?
                        Y'know, I'm only 10-15 mins away too...
