    Smokin up a 17lb brisket (before trimming) for some red chili and a 10lb pork butt for some green.


    Smoked brisket chili with black, kidney and pinto beans


    Smoked brisket chili cheese dogs are the best reason to make this



    The green is happening today so I don't have finished pix yet but when it is finished it will look like this

              I make up a boatload once or twice, each year. A brisket this size will make just under 3 gallons. It not only freezes very well, the freeze actually improves it.

              It takes a full day out of my life, not including smoking the meat. That is why I make large batches.

                Timing is everything...I've got 2 packer briskets on right now...you know I'm making smoked brisket chili cheese dogs.

                I've got to up my green chili game as well...please post the particulars. I've got a bunch of Hatch green chili in the freezer just waiting to play.

                  It is better when using slow smoked pork than it frying it hence the pork butt over the brisket in the pic.

                  That is a prime Costco brisket btw. They are less expensive than my local market choice briskets and much higher in quality. Better for less money? What a concept.
