        Yes, boosting the acidity is a tried & true method and lemon juice/zest added just before the end of the simmer will also brighten the overall flavor and add that much sought after "pop" to the profile.

        Love it!! Finely ground fresh dark roast is often a "secret ingredient" in my various attempts at both dry/paste rubs and sauces. If I do not feel like grinding beans I always use Cafe Bustelo which is always stocked at any Super Wally World...

          Last batch I made I used McCormick's sweet and smokey pulled chicken packet instead of the pulled pork packet. It was a huge hit with everyone who tried it and they all liked it more than the original. Have yet to try it on chicken but I'm guessing it will be a perfect match.

          Thanks again for sharing this recipe.

            I use the chicken packet to make a honey version. It uses honey instead of brown sugar and molasses.

                    Honey Bob BQ sauce

                    1) 1.25 oz package McCormick Sweet & Smoky Pulled Chicken Slow Cooker Seasoning Mix
                    1/2 tsp. Lawry's Seasoned Salt
                    1 tsp. Mad Hunky GP
                    1 tsp.Granulated Garlic
                    2 Tbs. Dried Minced Onion
                    2 Tbs. Cornstarch
                    1/4 cup Granulated White Sugar

                    Note: I use "dry measures" for all ingredients.

                    2/3 cup Cider Vinegar
                    1 cup Honey
                    1 cup Ketchup
                    2 cups cold water

                    Mix and cook as with original Bob BQ sauce. It does take considerably more effort to get the honey version to blend together completely.
