  • German Farmer Summer Sausage

    So, I had a little buck stop by a few weeks ago to check out the inside of my freezer -- So obliged and stuck him in there
    Finally got some time to make some summer sausage for Christmas. I followed the Len Poli recipe for German Farmer summer sausage (but subbed the beef for 50/50 venison & pork) - never tried it so I had no idea what to expect. Here is the the link:

    For the most part I followed the recipe with a few tweaks.

    Trying to use up some of my odd casings so I have a few different sizes & styles here.
    Smoked with hickory pretty heavy until IT of 140 and then into the SV bath tub.
    Santa stopped early and dropped off a new vacuum machine since my last foodsaver gave up the ghost. Love this new Vacmaster 275 - lot more options than my last one so I'm still getting the hang of adjusting the suction & seal time. Sealed a bit too much on a bag and squared some of my sausages. But it's a much more robust machine - 2 thumbs up if someone is thinking about buying one.

    Pulled them out after 90 minutes and into ice bath then into fridge overnight (it was late) and packaged them up next day.

    Tastes a little different - like Christmas (thinking that may be the caraway or Juniper ) so me thinks that was good timing. I still need to get the wife unit to give me a report card to see the real verdict....I'll be ninja shipping a couple packs out to get some feedback

          Great looking sausage Sir.

          Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
          My best asset however is the inspiration from the members on this forum.
