  • Dessert for breakfast

    A traditional French Cherry Clafouti flavored with vanilla, Amaretto, and Kirschwasser, just out of the oven.


    Dust it with confectioners sugar after it has cooled


    Serve with a dollop of crème fraîche as pictured below, or whipped cream, or ice cream, and all is right with the world.

        Kinda, but there is no crust and the finish is somewhere between a custard and a cake depending on how much flour is used to thicken the batter. This was closer to a custard. I suppose it should probably be baked in a tart pan but who knows where that thing is. Probably in my garage under the lawnmower

              The ones I have had and made used a thickened flan batter, a little different type of custard.

                      Part of the beauty of this dish is how easy it is to make and to customize.

                      There is only 1/4 cup of sugar in the Clafouti I made. Almost all of the sweetness comes from the fresh sweet dark cherries. The custard or cakey custard can be made lite or rich. Custard ingredients vary from a lot of eggs with additional yolks, heavy cream and even cream cheese or you can go lite with just milk and a couple of eggs. The Amaretto and Kirsch can also be left out and just flavor with almond and vanilla extract.

                      Cherries may be traditional but other fruits that hold their shape when cooked such as pears, apples, and even blueberries are possibilities.

                      Lite and savory or rich and sweet. Its up to you.
