Ok guys and gals you have taught me a lot but I don't understand how to make the burnt ends on the brisket do you use the whole point or???? any info on this would be great.

Traditionally the point is what is used for burnt ends...I think the higher fat content of the point makes it perfect for additional cook time without drying out...However i have used meat from the flat before as well as chuck roast...Its all about what you have available...and how much B.E. you want to end up with...Craig
