  • First PBC Brisket

Pretty impressed all in all with the hanging method of smoking a packer brisket! About 9 pounds trimmed and seasoned with Steak & Brisket seasoning.

    -----

Pulled at 160º to wrap in foil.

    -----

    -----

At 201º pulled and cooler rested for an hour.

    Very Tasty!

    Thanks for looking!

Brisky looks great...I have to admit...I'd be nervous. Probably add and "OH SHIT" shelf to catch that thing when it fell off and was headed for the fire. I'd also set my pan of burnt ends on that same shelf!

Nice work. Never hurts to have more than one method to accomplish a good cook.

First few hours was 230°, then the wind came up and it ran 250° plus the remainder of the cook.

Yep one load - topped the basket off full and then added 1 lit chimney load to the basket. It was just about completely out when we pulled it off so if I had any larger than a 10lb brisket I would guess you would have to reload or stack the briquettes tighter in the basket...we just dumped them in.
