  • Cherry smoked Asian beef ribs (Q-View heavy)

    Picked up a pack of meaty beef ribs from Meijer. Using a recipe modeled on this one I rubbed these down this morning and started smoking them about 3pm in my 30" MES with cherry chips. My rub take on this was as follows:

    ‎3 tablespoons Chinese five spice powder
    2 tablespoons garlic powder
    2 tablespoons brown sugar
    1 tablespoon freshly ground black pepper
    2 teaspoons chili flakes
    1 teaspoon ground ginger
    dash of salt


    Trimmed up


    Rubbed down.


    Getting ready to make some sauce.


    I could grill onions and garlic all day just to smell it.


    Quick temp check, sitting at 155 right now about 5:30pm.


    Sauce is coming together nicely. I only used two oranges for juicing the sauce. Added a dash of grated ginger too.

    They should be ready for saucing soon.

          Final saucing, they are at 178F right now, and I am just getting the white rice boiling. Going to pull them off to rest for a few then plate up shortly.

                Pulled them off at 180F. Let them rest for 10 minutes while my Success rice boiled. (Hey! I don't have time to do everything right!) Final result was good enough for us.

                        While I enjoyed the flavor, my wife thinks I used too much rub on the ribs. The sauce itself was very thick and tangy, the orange juice/pulp gave a great citrus flavor to the sauce. I plan to do these again soon, with a slightly thinner sauce next time.
