  • Prime Rib Dinner

    I decided that I would fix a Prime Rib Roast for dinner tomorrow. I plan on sitting outside tomorrow smelling the sweet smell of pecan smoke while the prime rib takes a long low & slow nap in that sweet pecan smoke.
    Then I'll let it rest while I fire up the Keg to about 550° for a quick sear before it's final rest before slicing for dinner.
    All in all, I'm looking forward to a relaxing day tending the cookers.

    A little prep tonight for tomorrow's smoke.

    A heavy dusting of a mix of Sea salt, CBP, minced garlic, and minced onion. It'll get another dusting when it comes out of the fridge tomorrow.

    For now it'll rest uncovered in the fridge til morning.

                  First update.......

                  Took the prime rib out of the fridge and let it set on the counter for a couple hours to come up to room temp. Then I gave it another dusting of spice mix just before I put it in the UDS. I put it on a rack with a pan under the rack to collect all the juices.
                  While the roast was warming up I got the UDS fired up. I'm using RO lump and pecan wood for this smoke. I'll be cooking at 190° to 200° +or- a few°.
                  This part of the cook will take around 5-6 hours based on weight and cooking temp. So I won't open the lid for about 4 hours for the first check of the progress.

                      When the prime rib IT got to 124°, I took it out of the UDS to rest loosely covered for an hour on the counter
