Pulled Pork Omelet

Had quite a bit of pulled pork leftover from last Saturday's smoke so this morning I made a pulled pork omelet.

Nothing fancy, just some pulled pork, pico de gallo and some mushrooms.



Here's the PP going in . . .



add some mushrooms . . .



a little pico de gallo . . .



and fold it over.



Oops . . . I always have a tendency to make my omlettes a lttle too full.

On a plate with some dice potatoes and a slice of toast. Add a little OJ and breakfast is served.



Pretty darn tasty. I'll have to do those again sometime.
