    Sorry about the picture quality folks. I made these when the blizzard hit and had to use kerosene lanterns for light.
    It was one of those late night meals. :)


    I had smoked some extra potatoes and onions when smoking some venison CB.
    Sliced and fried the tatoes and onion in a bit of butter...



    Sauted some minced garlic in a bit of oil, added 1 pint of chopped tomatos and some chopped green chilies and minced jalapeno..
    I let it simmer for awhile...





    Then I heated my corn tortillas in the tomato/chilie mixture...



    I fried two eggs,

    Then layered the two corn tortillas with the smoked fried potatos and smoked onion, then topped with the tomato, chilie, pepper, garlic mixture...
    Topped with two fried eggs and sprinkled with monterey jack cheese. cheddar cheese and some cubed smoked venison bacon.





    It was tasty. Would be good with leftover pulled pork or smoked brisket too.

          but it would be so much more romantic without the lights.

            It wasn't very romantic by myself in the dark during the blizzard...
            Ok ....I did like the lantern and the candles. lol

            If you drove up here that would surprise the heck outta me!

                          Wow, looks great Jeanie.

                          Have some of that same weather start blowing through in the last 5 minutes. This will be an all night storm. Looks like it's headed your way

                          P.S. now we have a Thunder, snow storm with 40-45 mph winds. Don't see that too often, at least the thunder during a snow storm.

                            Yes Mam they did, I tried it at all mom & pop's establishment's. Sure did like New Mexico.....they got a fine beach at White Sand's...hey ya'll somebody forgot the water!

                              I am so sorry but that does not look good at all.....IT looks so EXCELLENT that I feel like I'm in a 3rd world country and am looking to eat just once more....just once more before I die and Jeanie delivers it, smiles and then.....and then I wake up go back and look at the pictures again...so good
