Sorry about the picture quality folks. I made these when the blizzard hit and had to use kerosene lanterns for light.
It was one of those late night meals. :)
I had smoked some extra potatoes and onions when smoking some venison CB.
Sliced and fried the tatoes and onion in a bit of butter...
Sauted some minced garlic in a bit of oil, added 1 pint of chopped tomatos and some chopped green chilies and minced jalapeno..
I let it simmer for awhile...
Then I heated my corn tortillas in the tomato/chilie mixture...
I fried two eggs,
Then layered the two corn tortillas with the smoked fried potatos and smoked onion, then topped with the tomato, chilie, pepper, garlic mixture...
Topped with two fried eggs and sprinkled with monterey jack cheese. cheddar cheese and some cubed smoked venison bacon.
It was tasty. Would be good with leftover pulled pork or smoked brisket too.
