    Got a recipe I've been making for years and I can eat these things 'till the cows come home. Smoked ham hocks, or a smoked turkey wing works too. Add some beef base, some red pepper flakes, some cider vinegar a little granulated garlic, salt and pepper and chicken stock, cook until everything falls of the bone, add the greens and simmer for an hour and chow down, baby!! Ladle the greens and pot liquor over a slab of cornbread and kings don't eat any better.

        Grew up on collards and love them still. Recipe is about spot on to what I'm used to. I am with you up the pot liquor on the cornbread part.

          Ok, Virginia...sure.....MI...and PA...for collards...who knew! Here I thought this was purely a southern thang.

            Oh yea, we eat em here.lol maybe not as popular than in the more southern states. The best ones I ever grew is when I didn't pull my plants in the fall. They came back come spring and them leaves were delicious. I also have beans and cornbread down pat, but still workin on red eye gravy. Hehe

              I have been pulling collards from the same plants for three years. Planted a small garden one year and have been getting collards from it ever since. They keep getting better and better. Especially after a good frost. No green thumb required. Maintenance free.
