I've been looking, but can't seem to find a recipe that I like.

another good one..no exact measurements here....just do by eye... flour, backing soda, beer, seasoning, mix all together and dip rings in flour, then into above mixture, let drip, the coat with panko bread crumbs... and give it a fry..
