  • Layered Salad and Marinated Turkey Skewers

Another recent pot luck at work...this time I went the easy route. I made a layered salad that is super fast and easy. I'm sure you all have seen this before but I thought I'd share since Spring and Summer are just around the corner. This is how I prefer it, but like so many other items on this forum, do what YOU like.

    Large bag of salad mix
Red onion sliced / chopped thin
    Bag of frozen peas
Dressing of your choice - I use the cheaper off brand of light Miracle Whip
    Bag of shredded cheddar
    Bacon bits

Layer in your bowl the first 3 ingredients. Cover with dressing then cheese and bacon bits. See, I told you it was easy.

My lunch - my salad, some fruit and a little skewer my co-worker made with turkey, artichoke heart, mozzarella, tomato and olive marinated in some kind of balsamic vinegar. Also a little home made pico behind the skewer.

Of course there was a ton of other food but I stuck to this. Thanks for viewing!
    Becky

Yes, she said she let the turkey sit in the vinegar for just a little while. I usually am not big on vinegars but this was excellent.

Interesting... thank you Beck. I'm thinking...some rosemary and celery and thyme?

I love that salad. We always use to have that at my grandmas for the holidays when I was a kid. I don't think I've had it in quite a while.
