            HAHA Why I oughta...

            Enchiladas are simple....

            1 lb meat of choice. (pork, beef, even chicken)
            2 10oz cans of enchilada sauce or 2 packets of enchilada seasoning
            2 cups of shredded cheese ( i use mexican 4 cheese )
            10 6" flour tortilla
            pepper sauce to taste

            brown the meat, or if leftovers just heat it up. stir in 3/4 cup of enchilada sauce plus 1 cup cheese. this is your filling. fill tortillas with approx 3 to 4 tablespoons of filling. roll em and place em seam down in a greased 13x9 pan. tops with remaining sauce then cheese, and stuff in the oven at 375 for approx 15 minutes or till cheese is melted.

              Sounds pretty tough...of course Ill have to screw it up by addin onions or something to make it harder yet.
              And maybe brownin my mushy PP could give it something that its now missing. Hmmmmmm...
