Hams 25 hrs., CB 22 hrs ,bellies 19 hrs. Hams off at a 150° internal temp, CB off at 153° internal , bellies off at 130° internal. fry test on the smoked hams and it was phenomenal Smitty rubbed the chit out of the CB and some of the hams, along with CBP . Off the friggin hook no pun intended. Everything is cooling in the fridge, for a slice date tomorrow.
Red oak and minute olive smoke, in the RF.
breakfast. Gorgonzola cheese, scrambled eggs and last nights onion and jalapeno laden foccacia bread. OMG! Amazing!!
