Goats are everywhere around these parts. I've seen a few home built goat ovens where the goat is placed inside an oven type box with coals put on the top and under neath like a big dutch oven.
If it were me, I would treat it like a pork shoulder, making a basic rub with maybe some cumin added, smoking till a nice crispy layer of bark, and then foil till it falls off the bone. Serve it in tortillas with salsa or pico de galllo. Wood of choice would have to be mesquite.Keith
