  • Big local butt.

    Had to push up my smoke about 6 hours to get a clear window of time to do this monster bone in butt. Ill be putting it in around 6:00, planning on 16-20 hours for this one. Should get it in before the weather turs south tomorrow afternoon.

    Had my butcher set aside a bone in butt for me which i picked up on the way home. This bone in butt from farm about 45 minutes from my house came in at 10.5 lbs.... I was looking for about a 7-8 lb. butt, but its all good. This local pork this guy gets is great, never sees a cryo-pac, and is as fresh as you can get. $2.29/lb. is certainly reasonable. I use these for feeding my family, and special events.

    I rubbed the butt with yellow mustard and then a healthy coating of rub. I alos topped the rub with a light sprinkle of brown sugar & some dry onions. A little twist, but noth that crazy.

    Ill be using the WSM, full ring of Coshell with pecan and cherry wood buried in the briquettes. If past burns hold true I shouldnt need to add any fuel, just some wood as the smoke goes on. Plan is to fire the smoker @ 5:00, get the temp settled and toss the butt on @ 6:00 with no peeking until around midnight, then off to sleep....If your lookin', flippin' spritzin' you aint cookin'.... Ill probably forgo the probe this time as well and go by feel and touch, if I do probe it will be tomorrow morning.

                Geez, I wish I had a butt like that.
                Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.

                            love the wsm, got a solid nights sleep without worrying.

                            Woke up @ 3:00 a.m., nd just checked on the WSM, still chugging along. Went back to sleep and this is what I saw just after 7:00 a.m. 13+ hours pinned on this temp, one ring of fuel, just some wood added along the way.



                            Popped the lower vents all the way open to finish this bad boy off, sitting around 250 now. The vents were only open a crack for the rest of the smoke.

                            I opened the smoker once @ 11:00 p.m. before I went to bed, and the second time this morning, so far so good, plugged in the prbe after this pic, sitting @ 185, should be done by lunch.
