    I can't wait for lunch, and it looks like I'm gonna beat this afternoons storms. Really nice morning, but the wind is picking up.

    Gotta knock out the coleslaw(standard version, but I'm gonna add avocado). Also some beans with kilbasa.

              16.5 hours later its done. about what I figured.

              205 degrees on the probe when i pulled it off, pretty much was ready to fall apart. Pinched off a few samples, really nice.

              Cabbage, carrots & red onion cut for the slaw, slaw dressing made. Gonna mix it and add some chunks of avocado for fun. Kilbasa smoked ill add them to some beans right before lunch.

              Almost came apart putting it in the foil, now double wrapped in foil and wrapped in a towel in a warm cooler for a couple hours:




              I cant wait for a sandwich.

                Biggest baddest butt I've seen in awhile. Nice.
                Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                My best asset however is the inspiration from the members on this forum.

                    Turning out product like that is making me lean to another build.

                    Or I may try to put a charcoal basket in my hybrid and test it out.

                    How many pounds of co-shells did you go through?

                        about 16 lbs, there is a little left in the 18 lb. bag. Smoker could go another couple hours with whats left.

                                really nice bark and ring. Moist pork, poppin with pecan & cherry. I also made a finishing sauce I put in a squeeze bottle to put on sandwiches.
