  • 1/2 hog

    Help knock down 2 hogs the other day,half of one is mine. I don't have pics of the killing. I did keep the jowls for bacon, this is my first jowl bacon.
    No pics of the curring but here is what came out of the smoker.



    I hand sliced it all because there was only about 3 lbs



    It has great flavor but is a little chewy


    I also ended up with 8lbs of some nice white pork fat packaged and froze for later sausage work

                  Every year I buy a 1/2 hog from a old friend. He raise from 4 to 7 a year depending on who whats one. He and his wife also raise veggies and sell twice a week. It is one heck of a garden. My wife and I went over this spring and helped plant squash in 6hrs we planted 1400 squash plants. Hers is Dean and a few pics of what he and his wife do.
