Help knock down 2 hogs the other day,half of one is mine. I don't have pics of the killing. I did keep the jowls for bacon, this is my first jowl bacon.
No pics of the curring but here is what came out of the smoker.
I hand sliced it all because there was only about 3 lbs
It has great flavor but is a little chewy
I also ended up with 8lbs of some nice white pork fat packaged and froze for later sausage work
