    no, but if i want to EAT bacon or ham, i will.............its like brining a butt........if you aint careful, you will turn it into a ham. I just like the taste of pork sometimes......its like a hot dog............just give me mustard. Put too much stuff on it, like a chicago dog, the hot dog gets lost in the process.........all you tasting is the chili, cheese, peppers. etc.

    guess i am a purest of sort.

      In some cases, I agree. The point is, they don't become classics without some experiment in the first place. The tater came from the ground and into a classic. There was more than one step in that process I'd guess.

      As far as it not working out for you, I'm sorry for that. In the Marine Corps, we had a saying. If you don't make a mistake, you aren't trying hard enough. You make the same mistake twice, you aren't learning. So, you tried and it didn't work out but that shouldn't stop you from trying new things.

        I know what you mean Steve, and didn't mean anything negative about what anyone said. It's just ( I'M GONNA GET CRAP ) I get bored with the pulled pork and the rib's sometimes. I like making food for other folks more than myself. I just thought it to be an interesting change. Sorry Dudester.

          I just look at all the stuff that gets passed around here and how it's done. It just amazes me that it was ever thought of in the first place (sausage, brining, smoking, curing, etc). Pretty amazing when you stop and think about it.

          Who was the guy who figured it was a good idea to bury a pig in the sand with a bunch of hot rocks and palm leaves and then wait for hours on end while the rest of the tribe says, WTF, we're hungry now . That guy had some stones IMO and was lucky to live through the night.

                      No matter what, they look great to me, erain! I think even Rytek Kutas had a recipe for some cured ribs that he used to sell to the casinos in Vegas.

                        He calls them smoked back ribs.The recipe is a wet brine cure for 2 days and smoke till golden brown.Always wanted to try it. Page 330 in my 3rd edition book.

                        I'm not really understanding the criticism for curing a piece of pork.

                            I am with Kingudaroad on this one. Great idea, great post and great pics. I am always on the lookout for something different, a new twist on something that I have done before. If you don't try anything new, how do you know you're not missing out on something you might like even better?
