    I did say to cook them nice and slow.

    2 biggest mistakes people make when cooking sausages are:
    1) cooking them too fast on too high a heat, so the outside is burnt and the inside is uncooked.
    2) overcooking, so the outside is like leather and the inside is dry and horrible.

      This is why I almost always simmer them before grilling.

        Personally, I think pulling it off at 150 is too high. You're gonna get a few degrees on top of that while it rests regardless if you foil it or not. I cook mine to 138 then pull and rest and it usually reaches 145. Just my humble opinion. It looks like you are off to a great start with the new grill. Have some well deserved

          Dang you guys are fast repliers me thinks^^

          @sausage discussion: I have both cured and uncured sausages here.
          When doing them in a pan, I normally give them 2 minutes of extreme heat, than put them in another pan with a lower temperature for a couple of minutes. So far
          they were always perfect. But I never measured a temp. So I thing I'll try
          the same thing on the grill.
          Interesting discussion, never thought about one can do something wrong with
          bratwurst :)

          @Maverick: Thanks for your input good to hear so many different opinions
          now I'm all the more excited to see whether the thing
          is cr.p or worth the cash.

          And I'll do more rub. The amount I prepared was not enough :)

            Hmmm, I have 3 Mavericks.

            The first one is the Cheap-o----ET-73---It's 7 years old & has 24-7-365 Duty in my Curing Fridge.

            The second one is a White ET-732-----It's 6 years old and only needed one replacement probe so far. I still use it on every smoke.

            The third one is 2 years old & is a Black ET-732------I only use it when I want to make numerous temp measurements. Then I stick it in with the White one, so they're easy to tell apart.

            They all still work Great !!! So far I got 15 years out of the 3 units.

            Sounds like a pretty good record to me.

              That sounds like this thing is a tank!
              Got my shipping confirmation this morning.
              So the therm should be here by monday,tuesday the latest.

                I made a slew of moinkers and brought into the den went back out to tend the fire pit and all the mass quantitys of animal flesh in it. the pack went after em like I have never seen I did not even taste one.

                      Well that's no problem xD
                      Foodwise she'll cook her stuff and let me alone.
                      Luckily she is the kind of vegetarian that simply
                      doesn't like the taste of meat. Not the "oh those poor
                      cute animals" type.

                      For all other stuff she happily accepts my help
                      Cooking on a Kingstone grill, nothing fancy but
                      always fun.
                      Me loves some nice southern style barbecue... ah and some nice asian food ;)
