    thats it, a great roast, the La Caja tunrns out a great pig. No more finished pics as folks hands got porky, and the eating took over importance.

    Im gonna do another pig next year for sure.

      Ahhh, lacaja = cajun microwave.

      Food looks excellent
      So what was the occasion ?

      So it took over 90 lbs of charcoal - WOW.

      When we built the cinderblock smoker we used 40 lbs over about 18 hours.

      Must be a way to stop most of the heat escaping upwards, maybe a metal 'roof' about a foot above the charcoal to reflect the heat back down.
      Although maybe that'd set fire to the plywood.
      Got to be away to make that more efficient.

          thanks folks,

          The occasion was/is what is becoming an annual picnic @ my house for folks who participate on a Chicago food board = LTHforum.

          I just think that La Caja is a fuel hog, I followed the directions on the side of the box and the website. but started with 20 lbs of charcoal instead of 16 lbs as directed. I wanted a hot start. After that its 10 lbs an hour til the pig is done.

          The flavor of this local pig was outstanding. freshly killed, pumped with the mojo marinade. Really porky,. and really got the flavor from the bones roasting.

                      I think we had over 60 people, luckily it was a potluck and folks chipped in on the pig.

                      I however drank more than I ate.

                      I am craving a big pork sandwich for dinner tonight with some of that pig.

                          Nice job on the pig! I have not seen one of those in action, thanks for the post! Hopefully, Ry and I will get another pig done this year too... Ry? tee hee, pig roast long night for sure, but one hell of a meal!

                                I want one of those La Caja's now, even for a once a year pig roast it seems worth it. I didnt miss the smoke at all, the roasted flavor of the skin pork, and the meat roasting on the bone was great.
