  • Sauce longevity

    Kinda wondering... BBQ/finishing sauces generally keep well, due to the acidity (vinegar content) of them.

    Is there a specific Ph or percent standard 5% vinegar that ensures these things as safe?

        Rich, I could probably use some of that info. I usually don't throw it out until I have to hunt it down with a shotgun and fight to the death.

                  made some of the black jack sauce for my 40th back in november.
                  I liked it but nobody else really took to it.
                  It got left in a pot in the garden for a couple of months.
                  I binned it - but it didn't look or smell like it had gone off lol
                  can't remember what was in it now other than well stewed coffee.
                  Is caffeine a preservative ?

                  Also if we're judging keepability by ph. How about some links to easy to get indicator paper/kits.

                  I know aquatics centres sell ph testing kits and some garden centres also sell soil test kits that have ph tests in.
                  We used to use universal indicator paper at college - dunno where you'd buy that out in the world.
