    And I often say we don't eat enough dirt...BUT... when it comes to advice, especially to those cooking for others, we MUST err on the side of caution...agreed? Sure, there are shortcuts and cheats- but we CANNOT advise them.

      or just read up on the real facts and not depend on hearsay

      but like i said erring on the side of caution is good.

Just be smart in how you handle your food and getting it into the smoker introduces it to a low oxygen, high heat environment. Both are not good for bacterial development. The salting also hurts bacterial development.
            i am of the opinon our kids do NOT play in the dirt enuff..........was nutting for us growing up, to play in places where moms today would have a heart attack. and hence..........the kids today getting sick all the time........you get TOO strerile, your body cannot produce the needed anti-bodies to fight off sickness, they may come upon.......

            and rich......your WARNING THEN, should be on EVERY POST..........thankx for doing that on MY POST ! ! !

            its ALL OPINION........but thankx for singling me out anyways.........you ARE on the ball......oh grand master.........

              As you read, I'm with you in some regards. But advice given has to be as close to accepted procedures as practical.

                Unless we speak of botulisim. Then it happens to be a good envirionment. Hence the 4 hour danger zone or curing processes. In particular with jerky- as most is done very slow.

                      I'm with Rich on this. And anecdotal evidence is not the same as scientific proof.

                      You know all of those great motorcycle jumps that Evel Knievel did during his career? None of them killed him. That doesn't mean that they were safe.
