  • Corned Beef

In preparing some corned beef for pastrami I got the briskys into their cure.
1Tbs pickle spice and 1Tbs TQ per lb was the simple recipe here.
They'll sit in stir for about 10 days or better. The wife already claimed one for the O.

I tried the vacuum seal method but the darned seeds kept getting in the seam.. It took a few tries then I had to double seal them. I had better luck with zip locks immersed in water to evacuate all the air.. (Capt. Dan's idear)

I look forward to seeing the progress. Is she gonna be mad when your smoked one is better? Have a little in-family throwdown.
