  • whole chicken-how long?

    i bought a 6 1/2 lb chicken for 59 cents/pound today. planning to put it on the smoker this weekend. as this would be the first time i've ever smoked a whole chicken, can anybody let me know approximatly how long it would take to smoke a 6 1/2 lb whole chicken?

    Hmm... till it's 170° or so...

    What temps? I recommend north of 250, BTW.

      As Rich noted, try for higher temps, or your skin will most likely be "rubbery". Personally, I like to do them spatchcocked indirect on a kettle @ 350+ which typically takes a 5+- bird a little over an hour to 1.5 hour to hit 165-170's.

      Are you planning on smoking it whole? Like beer can style standing up? In sections? Spatchcocked (butterflied)? This might help us get a little better idea of a time for you also.

        Rich is right...cook to temp, not by time.

        But, I realize that you want to ball park a time, so I'll go out on a limb and say 2.5 hours at 250°-275° degree smoker temp. Now having said that, here is the disclaimer...if your wife yells at you it is your own damn fault for something you probably didn't realize you did any way and I assume no liability for the ensuing fight. Tell her to relax and have a coctail, the bird will be done when the bird is done!

          I'd say given those parameters, yer safe with the 2.5. MAYBE less- but not by much if so.

            BBQ Dan Man,

            First, this is one of the most frustrating things I had to learn to deal with as I started out. My best advice to you would be to start tracking times and temps for everything you smoke! because the "til temp" is true... but a HUGE PITA when you need basic ball park time info.

            With that said, my notes are 300* will cook a whole chicken bird in approx 2.5 hours - like Rich and Dana said! Poultry does not benefit from low and slow. Build a fire and cook that bitch!

            I would suggest that you brine it, and take it to 165, then let it rest. It will go to 170, and be the bestest chicken ya ever et.

                  thanks for the advice, guys! i'd be smoking it whole, like the beer can chicken thing. as far as smoker temps., i'm looking to keep it somewhere between 250*-300*.

                    That said, I'm guessing 1.75- 2 hours @ least.
