  • Weber Brisket.............

    This is me goofin' off in the backyard awhile back...........



    Found a 17-1/2# Choice pretty pliable one & trimmed to a bit over 15#...............

    Wobbly photo.....I start into a meat frenzy early on stuff like this...................



    Tried something a bit different this time.......baked the trimmings down friom right at the start to gather up some beef goo for the bean pan.............



    Shot w/ Big Ron's moisture retention injection & rubbed w/ Hint of Huston.......had to fold this dawg up to get it into the tupperware for a rest.......



    On at 10:15, fatcap down & then flipped over @ 5AM.............






    Here's the burn when the goo pan came out, but before beans went in at about 6AM or so........


    Beef Goo......



    Beans were Great Northerns w/ some red bells, onion dry garlic, jalepeno ketchup & a tad of SBR's spicy......



    Off @ 12:15 in the afternoon, cut some slices, then packed tight in juice, to drive around to Ma (she loves her beef !) & a friend...........





    Set the large chunks back on in foil, with a small row of coals to keep it warming @ 165f & when we got back, sliced up for our dinner......



    Droop Test.................



    Flat, after the extra heating was ever so slightly de-moistureized, the point was perfect ........yummmmmmmmmmm

            I have never tried to cook anything that big in me Weber... you nailed it!!

            I got no left... gotta wait for the reload...

                  There was a few small spots in the flat that seemed like they might have taken too much heat, but other than that, just peachy.....

                  Covered, damper-controlled cooking.....IF YOU PLEASE !!!
                  "But the ever versatile kettle reigned supreme"
