I wanted to give a chuckie a try on my new stumps smoker. This one is a little under 4 lbs. Rubbed, injected and wrapped for a rest in the fridge. It took about 7 hrs to get to an internal temp of 203. I pulled it and let it rest for 30 minutes then used my claws to shred.
